The Japanese A5 Filet Mignon at CHS Wagyu is a top-tier cut from the tenderloin, known for its exceptional tenderness due to minimal muscle use. Sourced from Japanese Wagyu cattle and graded A5, this filet represents the highest quality, delivering a soft texture and rich, buttery flavor that’s truly unforgettable.
Cooking Method: Given its tenderness, sear the filet on high heat for a short time. Season with one of our unique kosher salts, and quickly sear all sides in a very hot skillet. This filet is also ideal for sashimi or nigiri—flash sear with a blow torch and finish with truffle sauce for a luxurious sushi experience.
Recommended Temperature: 125°F (52°C) for medium-rare, to ensure it stays tender and juicy.
