The A5 Japanese Wagyu Tokyo Block cut is a carefully selected portion from the chuck roll, prized in Japanese cuisine for its intense marbling, rich beef flavor, and versatility. Cut into a refined 5 oz portion, it serves as an ideal introduction to A5 Wagyu, offering indulgence without overpowering the palate. Traditionally favored in Teppanyaki and Yakiniku cooking, this cut excels in quick, high-heat preparations while remaining exceptionally tender and buttery.

Cooking Method: Lightly season with salt just before cooking. Sear quickly over high heat on a teppanyaki griddle, cast iron pan, or flat top, allowing the fat to render and the surface to caramelize. This cut shines when eaten on its own but is equally delicious sliced thin for sharing, pairing beautifully with rice, simple sauces, or fresh accompaniments.

Recommended Temperature: 125–130°F (52–54°C) for medium-rare. A brief sear is all that’s needed to preserve the delicate texture and signature A5 richness.
