Cut: Center-cut beef tenderloin
Grade: USDA Prime – the highest USDA grade, prized for exceptional marbling and flavor.
Cooking Instructions: Remove from the refrigerator 45–60 minutes before cooking.
Pat dry and season generously with kosher salt and freshly cracked black pepper.
Sear in a hot cast-iron skillet with a small amount of high-heat oil for 2–3 minutes per side until a rich crust develops.
Transfer to a 425–450°F oven and cook to your preferred doneness.
For the best eating experience, pull at 130°F for a perfect medium-rare. The steak will continue to rise about 5°F while resting.
Rest for 10–15 minutes before slicing to lock in every bite of flavor and juice.
