Our Australian Angus filets are incredibly tender and one of our leanest cuts. While the filet mignon, or tenderloin, may not boast the same buttery richness as some of our other offerings, it is prized for its soft texture and pure beef flavor. These Angus cows are raised in Australia, so while they don't carry the USDA Prime label, they deliver the same premium quality and taste. This cut is versatile and shines with added ingredients, making it perfect for both cooked dishes and raw preparations like beef tartare or carpaccio. It’s a fantastic choice for those seeking an affordable filet with a Prime-like experience.

Cooking Method: Best seared quickly in a cast iron skillet over high heat, then finished in the oven at 350°F. Top with one of our CHS Wagyu kosher salts for added flavor.

Recommended Temperature: 125-130°F (52-54°C) for medium-rare.
